Simple recipes...chef Jeff Fleming's vegetarian quesadillas

Chef Fleming's vegetable quesadillas are loaded with flavor and nutritional goodness. There are many varieties of tortillas at the grocery store to choose from like gluten-free, low-carb, or sugar-free. So many options to cater to your healthcare needs. By using fresh ingredients and keeping it light, this is the perfect lunch or snack.

The dipping sauce is quite simple and going low sodium is an option for those keeping a close eye on their salt intake.

Vegetarian quesadillas
2 - whole wheat tortillas
1 - 8 ounce fresh snow peas
1 - 16 ounce baby spinach
1 - 14 ounce jar kimchi
1 - 8 ounce queso fresco (4 per quesadillas)
​(substitute feta if needed)
1 - tsp fresh garlic
1 - tbs. fresh lemon juice
1 - tbs. sesame oil

For dipping sauce:
4 oz soy 
4 oz teriyaki
2 tsp. toasted sesame seeds
1 tbs. scallion sliced thin
Pinch of crushed red pepper

Directions:

In a sauté pan start your snow peas in sesame oil. As they begin to brown add garlic and toss for 1 min. Add spinach in bunches until wilted completely. Season with salt and pepper.  Add lemon juice.

To build quesadillas: I always prefer cast iron to make quesadillas but any griddle or large pan will work. Heat to medium heat, add a tortilla, sprinkle with queso fresco, and add 1/2 spinach, and snow pea mix. Top with kimchi to taste (I like more some may not).

It should take approximately two minutes to brown fold & finish toasting. Make 2nd in the same manner. Remove to cutting board & cut into quarters.

To make dipping sauce in a microwave-proof bowl, simply add all ingredients & heat for 30 sec to 1 min depending on wattage (just to warm & release oils in red pepper). Serve warm & enjoy.
