Why is this pie so good? It's a decadent treat that cuts the bourbon with the perfect amount of sweetness. It's not the Derby without the bourbon. When in Rome or Kentucky- My sister-in-love gave me this recipe. Every holiday, she's in charge of the pies. Kentucky Derby pie is a family favorite. There are always two pies; one with a semi-sweet chocolate chip and the other with butterscotch chips. For Derby Day, it's time to try dark chocolate chips. The recipe: Two eggs slightly beaten One cup of sugar 1/4 cup of flour 1/2 cup melted butter; cooled One cup of dark chocolate chips One tsp vanilla One cup of chopped pecans One deep dish pie crust Mix the dry ingredients. Mix the wet ingredients. Combine. Add to frozen pie crust. Bake at 350 degrees for 45 minutes or until set. Let it cool. Top with whipped cream and a sprig of mint. Keep the theme going!
